How to Make Wine - Afraid to Venture Into Winemaking?

Many people are intimidated by the thought of making wine, believing the process too complicated for mere mortals. In reality, winemaking is simple and easily mastered. Simple, however, does not mean fast... be prepared to wait months before sampling the final product!
The most difficult step of winemaking is choosing a recipe; thousands are available on the Web. Each recipe dictates specific ingredients, measurements, and steps. However, they all follow a similar sequence:
1. Prepare and mix all the wine making ingredients, except the yeast, in a tub or bucket.
2. Add Campden tablets to destroy any 'wild' yeast that made its way into the mix, cover the container with a clean towel, and wait 24 hours.
3. Sprinkle yeast over the mix, re-cover it, and let it ferment for 5 to 7 days.
4. Siphon the resulting liquid into a fermentation vessel (a glass jug), leaving behind all pulp, sediment, and solids. Use a fermentation trap to seal the vessel, then wait 4-6 weeks.
5. Siphon the wine into a second vessel, seal with the trap, and let it rest until the fermentation process has stopped and the wine is clear.
6. Check your recipe! Some call for Campden tablets to be added before bottling the wine. This prevents additional fermentation and results in a sweeter wine.
7. Siphon the wine into clean bottles, and cork them securely.
Store the bottles upright for 3-5 days, then on their sides for six months before sampling. Odds are good that you'll have a lovely wine with which to impress your friends.
